Another meal that was created while our Austin friends, Ed and Kyle, were in town was this absolutely amazing pizza. We were all trying to figure out something delicious to make for dinner so we brain stormed, and thus, this recipe was born. Thank you, Kyle, for suggesting we do something with sweet potatoes!
1 large sweet potato, sliced
1 medium onion, sliced
1 Tablespoon honey
10.5 ounces goat cheese
2 Boboli whole wheat pizza crust
2 teaspoons dried sage, separated
3 Tablespoons extra virgin olive oil, separated
Balsamic glaze

Keep in mind that this recipe yields two pizzas, so it is an excellent way to impress some guests.
Preheat the oven to 400 degrees. Skin and slice the sweet potato into about ¼ of an inch slices (or less) and set aside. Slice the onions, keeping them in rings. Heat 1 tablespoon of olive oil in a large skillet and add the onions. You'll want to add salt to draw out as much moisture as possible. Once the onions begin to brown add the honey and continue to cook until the onions are nice and brown.
Spread the goat cheese evenly over the pizza crust (about half of the log of goat cheese for each pizza). Remember, a little goat cheese goes a LONG way. So delicious, but very strong. Once the cheese has been spread, add the caramelized onions.
Next, you will toss the sweet potato slices in 2 tablespoon of olive oil, making sure to coat all of the slices. I sauteed the sweet potatoes for a couple minutes to soften them up and then cover each pizza with the slices, leaving room for crust. Sprinkle a teaspoon of dried sage over the pizza and drizzle with a little honey. Place in the oven and bake for about 25-30 minutes or until sweet potato has softened. Drizzle the Balsamic glaze (Gia Russa) over the two pizzas and slice each pizza into 4 pieces. We served ours with a salad with garbanzo beans and sliced cucumbers with a dill and Greek yogurt sauce. IT WAS FANTASTIC.
