mini eggplant pizzas.

Meatless Mondays, eat your heart out.  When you get home between 8:30-9pm most weeknights and you love to cook, dinner can get tricky.  So, I give to you, a 15-20 minute meal.  Boom.

AND, I had left overs.  I win.

*Forgive me on the ingredient amounts...I just sort of winged it*



Mini Eggplant Pizzas.

Ingredients.
1/2 eggplant, sliced into thin rounds
1 medium tomato, sliced into thin rounds
Pizza sauce
Spinach, fresh
Basil, chopped (or dried)
Mozzarella, part skim, shredded

Directions.
Heat oven to 400 degrees.  Spray a cooking sheet with cooking spray.  Place eggplant rounds as the base or "crust."  Spoon a dollop of pizza sauce on to each round.  Layer each with 3-4 leaves of spinach.  Place tomato slices on top.  Sprinkle with mozzarella and basil.

Place in oven and bake for 15 minutes.  Perfection.
