apple, chicken sausage, caramelized onion, & brie pizza.


I'm not usually one to read recipes on the back of packages, but I just so happened to read the one on the back of the Al Fresco Sweet Apple Chicken Sausage.  I promptly put the package back into the fridge and saved it for dinner.  I even had all of the ingredients ready to go, including the brie!  One must always have brie on hand.  Well done, Al Fresco, well done.

Sweet Apple Chicken Sausage, Caramelized Onions, Brie, & Apple Pizza.

Ingredients.
1 package al frsesco Sweet Apple Chicken Sausage, sliced thinly
1 medium sweet onion, sliced into thin rings
1 tablespoon thyme, fresh, chopped
2 medium apples, sliced thinly
10 thin slices brie
1 cup spinach
¼ cup white wine
2 tablespoons extra virgin olive oil
1 Boboli whole wheat pizza crust
Salt
Honey

Directions.
Preheat oven to 375° F.  In a large pan, heat oil over medium high heat and place onion rings in.  Add salt to draw out as much moisture as possible. Stir periodically so that the onions do not stick and burn on the bottom of the pan.  Add the fresh thyme and white wine once the onions begin to brown. Continue to cook for an additional 10 minutes and add a touch of honey until onions are caramelized.

Place pizze crust on a pizza stone.  Lay spinach as a base layer on pizza crust, leaving about an inch around the edges.  Lay sliced sausage down evenly, followed by the apple slices,  caramelized onions, and topped with the brie slices.  Drizzle honey over the pizza and bake for about 10-12 minutes.  Allow to rest for five minutes.  Slice and serve!
