ground turkey lettuce wraps

Who doesn't love lettuce wraps?  I have adapted this from my stir fry chicken and, even though I tend to say this word a lot, it was deeeee-licious!  I happened to make these a while ago when Nate was out of town back in the fall, so I'm sort of playing catch up here with recipes.  Sorry, I'm being a bit of a slacker, but I promise to do a better job in the new year (happy 2013, everyone!).  Speaking of new year, these would be GREAT to kick-start that new diet.  Clean eating is the best :)

Ground Turkey Lettuce Wraps

Ingredients
1 lb. extra lean ground turkey
1 tablespoon chili sauce
2 tablespoons light sodium soy sauce
1 teaspoon ground ginger
Salt & pepper
1 head of lettuce
1 cup shredded carrots
1 green pepper, chopped
1 red pepper, chopped
1 small onion, chopped
2 tablespoon extra virgin olive oil, separated

Seasoning Sauce
4 tablespoon white wine vinegar
5 tablespoon low-sodium soy-sauce
¾ teaspoon salt
1 teaspoon cornstarch
1½ teaspoon sugar
3 tablespoon chili sauce

Directions
Add 1 tablespoon extra virgin olive oil in skillet on medium-high. Stir in ground turkey and break up until in begins to brown.  Combine chili sauce, soy sauce, ground ginger, salt, and pepper in a measuring cup and whisk together.  Pour over ground turkey and let simmer for a couple of minutes.  Check several pieces before removing from heat into a medium mixing bowl.

Add another tablespoon of olive oil in skillet on medium-high. Stir in carrots first. Add peppers and onion. Stir until they are fork tender (about 5-10 minutes). Turn off heat and let them set for a minute or two.

In a mixing bowl, whisk together all seasoning sauce ingredients.  Add ground turkey and vegetables.  Stir everything together well.  For lettuce wraps, wash the head of lettuce and let each leaf dry (or towel off).  Add about 1 cup of the ground turkey and vegetable mixture to each leaf and roll up like a taco. Serve with quinoa and maybe some broccoli!
