egg, green chile, & green onion breakfast burrito

Boy do I miss breakfast tacos from Austin.  You simply cannot find any decent ones around the Atlanta area.  Take note, breakfast taco tycoons, Atlanta should definitely be your next destination.  Grab an airstream, some breakfast ingredients, and make your way to the East Coast!  We'll be waiting :)

In the mean time, here is a simple recipe to help keep the cravings away.



Egg, Green Chile, & Green Onion Breakfast Burrito

Ingredients
(yields 2-3 small burritos)
3 eggs
¼ cup fat free milk
1 green onion, chopped
½ can green chiles, drained
2 whole wheat tortillas
Salt
Pepper
Taco sauce
1 Tablespoon extra virgin olive oil

Directions
Whisk eggs, milk, chopped green onion, and green chiles together in a small mixing bowl.  Set aside.

Heat olive oil in a small frying pan over medium high heat. Pour egg mixture into pan and move around with a spatula until all egg is cooked through. Sprinkle salt and pepper over mixture. Once cooked, put egg mixture into a medium bowl, covered. Lower heat in pan and place one tortilla at a time, heating each side for a few minutes. Transfer to a plate, spoon egg mixture in the middle of the tortilla, fold each short end towards the center, and roll one side to the other to create a burrito. Pour taco sauce on plate or over burrito and eat up!

With breakfast burritos/tacos, the possibilities are endless. You can add potatoes, cheese, sausage, chorizo, etc. Get creative with it!
