grilled vegetable quinoa


Sometimes a girl just needs some veggies :)  I like to use this one for light lunches and a quick veggie fix. Super easy, colorful, filling, and so good for you!

Grilled Vegetable Quinoa

Ingredients

1 cup quinoa, rinsed
2 cups water
½ vegetable bouillon cube
1 zucchini, sliced
1 carrot, sliced
1 red bell pepper, sliced
½ sweet onion, chopped
Salt & pepper, to taste
2 teaspoons ground cumin
2 tablespoons extra virgin olive oil

Directions
Bring 1 cup quinoa and 2 cups water to a boil, dropping in the ½ bouillon cube. Reduce to a simmer, cover, and cook until all water is absorbed (about 15-20 minutes).

While you wait for the quinoa to finish, heat 2 tablespoons of olive oil in a grill pan. Add onions and carrots. When onions start to become tender, add the zucchini and red bell pepper. Season with salt and cracked pepper. Cook until peppers, zucchini, and carrots soften (but not soggy). Keep them a bit crisp to compliment the crunchiness of the quinoa grains.

Add veggies to quinoa and stir in 2 teaspoons of cumin. Best served in a bowl or over a bowl of spinach.
