chicken ole!

And yet another excellent slow cooker recipe from the cookbook my sister gave me... This is so easy to make and really super convenient if you are having a few people over or if you have a whole family to feed.  It also makes for fantastic leftovers :)  Again, I suggest using the slow cooker liners because I mean why wouldn't you?

Chicken Ole

Ingredients
2-3 cups chicken, cooked and cubed
1 cup light sour cream
1 can 98% fat free Cream of Mushroom
1 can 98% fat free Cream of Chicken
2 tablespoons onion
1 ½ cup 2% milk cheddar cheese
6 torn-up, low carb tortillas (La Tortilla Factory)
1 jar chunky salsa
½ cup 2% milk cheddar cheese

Directions
Mix soups, sour cream, onion, and the 1 ½ cup cheese in a medium mixing bowl.  Layer torn pieces of tortilla, soup mixture, chicken, salsa.  Continue layering and on last layer, top with ½ cup of cheese.  Cook on low in slow cooker for 4-5 hours or on high for 2-3 hours.
