cheesecake stuffed strawberries


Life has been the craziness for the past few weeks.  This is mostly due to the fact that Nate and I have FINALLY moved into our own place and I must say that after three months of nomadic life, I am beyond ready to have a place to call my own.  What is absolutely intriguing me is the fact that we were able to (mostly) outfit an entire 3BR/3B condo with what we had in a one bedroom apartment in Austin.  Holy crap.

Now that things have settled a bit I do have some muy delicioso recipes...  (Please excuse all improper use of the Spanish language... it's just what my sister and I do) ... A few weeks ago we went over to Nate's BFFL's house for a little birthday get together and I decided to make some cheesecake stuffed strawberry treats that I found via Pinterest.  OH. MY. GOD.  I can't stop myself from spending at least two or three... or four... hours on this website.  If you haven't been invited to it, I would be glad to invite you.  Just send me your email address and then you, too, can be addicted.  I mean it is DIY and recipe crack.  I have also vowed to become super crafty, so look out for posts on that as well. :)  H'okay...back to food...

So I never actually photographed the final product because I may or may not have had one too many glasses of wine, but the before pictures will suffice...

Cheesecake Stuffed Strawberries

Ingredients
1 pound large rinsed strawberries
8oz. package of 1/3 less fat cream cheese (softened)
3 tablespoons powdered sugar
1½ teaspoon vanilla extract
Graham cracker crumbs
1 Ziplock sandwich bag
Chocolate glaze or chocolate sauce



Directions
First you will take your newly rinsed strawberries and begin to remove the tops and hollow out the inside. You can use a paring knife, but I just used a small sharp knife. Again, I wasn't in my own kitchen, so I had no idea where anything was... Make sure you don't cut too far down inside the strawberry because we are going to cut a little bit of the bottoms off so that we can stand them upright. Once this is finished, set aside.

In a medium bowl, combine the cream cheese, powdered sugar and vanilla with a mixer or by hand. Next, grab the Ziplock bag and add the mixture into it. Then, cut a small portion of one of the bottom corners off. Fill the strawberries one by one using your homemade piping bag. After you have finished filling the strawberries, pour some graham cracker crumbs on a piece of wax paper and roll each strawberry top in the crumbs. Once finished, drizzle chocolate all over them (to your preference) and enjoy as many as you deem necessary.
